Three broths in one potThe heart of the meal

Hong Tang 紅湯

Our signature spicy mala broth: rich chicken paitan layered with more than a dozen spices and herbs. Bright heat at first, a deep warmth afterwards.

Qing Tang 清湯

A whole chicken simmered slowly with jujube, goji berry, lotus seed and longan. Not spicy at all — gentle, savoury and quietly sweet.

Japanese Dashi 和だし

A clear, light Japanese stock, for eating the pork the shabu-shabu way — swirled for a few seconds and eaten straight away.

  • Maiton pork — a rare Japanese crossbreed of Duroc and Berkshire, with fine texture and a clean, sweet fat.
  • Up to 12 kinds of mushroom — including abalone mushroom, tamogitake, pink oyster, and thick domestic kikurage grown without pesticides.
  • Six house-made dipping sauces — nut satay, garlic chive, tomato, yuzu shio-koji, green chilli and coriander, and curry sofrito. One pot, six different meals.
  • Kombu noodles to finish — low-calorie and gluten-free, soaked in the broth you have been building all evening.
